Spam treats

Hawaii, host of the 90th Annual Kiwanis International Convention, has a hankering for Spam. As reported in the March 2005 edition of KIWANIS Connected, the islanders buy 4 million cans of the canned meat annually.

Some KIWANIS Connected readers don’t share such Spam cravings. One person’s favorite Spam recipe, for example, was to “keep it in the can.” Others, however, like it with eggs, grits, potatoes…Well, here, see for yourself.

Fried Spam

Growing up in the 1940s, I became very familiar with Spam. Ration was the thing of the times, but bread and Spam were readily available. I loved it when we fried a slice of Spam. Slice Spam. Fry it with onions and mushrooms.

Spam and fruit over rice
Cut one can’s worth of Spam into one-half-inch cubes. Put the cubes in a baking dish and add diced pineapple and papaya. Bake until fruit cooks up. Serve over rice. Serve a side order of mai tais.— James O. Green, Kiwanis Club of Columbus, Meridian, Indiana

Spam-stuffed eggs
1 dozen eggs boiled, peeled, and cut in half. Remove yolk and place in a bowl.

1 can Spam, diced into cubes.

In a blender, combine egg yolks, Spam, 1 cup mayonnaise, ¼ tsp of salt, dash of pepper, and dash of Tabasco sauce. Blend until creamy. Spoon mixture into egg-white halves. Refrigerate for one hour. Enjoy!— Pamela J. Aguiar, Kiwanis Club of Blackstone Valley/Peters, Rhode Island

Spam on a muffin
Pan fry Spam in a little butter and serve like Canadian bacon on an English muffin.— Barbara Macchiaroli, Kiwanis Club of Huntington, New York

Turkey Spam
Sprinkle thinly sliced turkey Spam with fresh oregano and minced garlic. Fry in real butter and red wine until golden brown. Sprinkle uncooked side with oregano and garlic and turn. Fry until gold brown. Serve with remaining cooking juice.— Donna Stuckey, Kiwanis Club of Pittsburg, Kansas
